GREEN BEAN SALAD

INGREDIENTS
Salt and Black pepper
3/4 Pound of Green Beans
2 Tbsp Lemon juice
1 Tbsp Vinegar
1 Garlic Clove, minced
3 Tablespoons extra virgin olive oil
4 Pints of cherry Tomatoes
2 Cups of cooked chickpeas cooled and drained
4 Ounces of Feta, crumbled
2-3 Tbsp chopped Dill
Pinch of dried Oregano
DIRECTIONS
Boil water iin a medium saucepan over high heat. Add 1 tablespoon of salt and cook the green beans in the water until crisp.
Transfer green beans into a bowl of cold water, drain, then dry
Make the dressing: In a bowl, put lemon juice, vinegar, garlic, salt, and black pepper to taste, then whisk in olive oil
Make the salad: Add tomatoes, green beans, and chickpeas to a salad bowl. Add dressing then toss to coat. Add Feta and toss again, let marinate
Sprinkle oregano and dill, serve, and enjoy!
