GREEN BEAN SALAD

INGREDIENTS

  • Salt and Black pepper
  • 3/4 Pound of Green Beans
  • 2 Tbsp Lemon juice
  • 1 Tbsp Vinegar
  • 1 Garlic Clove, minced
  • 3 Tablespoons extra virgin olive oil
  • 4 Pints of cherry Tomatoes
  • 2 Cups of cooked chickpeas cooled and drained
  • 4 Ounces of Feta, crumbled
  • 2-3 Tbsp chopped Dill
  • Pinch of dried Oregano

DIRECTIONS

  1. Boil water iin a medium saucepan over high heat. Add 1 tablespoon of salt and cook the green beans in the water until crisp.
  2. Transfer green beans into a bowl of cold water, drain, then dry
  3. Make the dressing: In a bowl, put lemon juice, vinegar, garlic, salt, and black pepper to taste, then whisk in olive oil
  4. Make the salad: Add tomatoes, green beans, and chickpeas to a salad bowl. Add dressing then toss to coat. Add Feta and toss again, let marinate
  5. Sprinkle oregano and dill, serve, and enjoy!
