MEXICAN STREET CORN 

Love Mexican street corn? Try out this delicious recipe with a healthy twist! Corn contains Vitamin C, Vitamin A, and Vitamin B1. All of these Vitamins are great for your heart, nervous system, and fuels you with energy to keep you strong and healthy. 

INGREDIENTS

  • Corn: 2/3 Cup
  • Cojita cheese or queso fresco: 1tbsp
  • Mayonaise and Greek Yogurt: 1 1/2 tsp
  • Lime Juice: 1/4 juice
  • Fresh Cilantro: 2 tsp
  • Olive Oil: 1/2 tsp
  • Garlic: 1/4 clove
  • Chili powder: 1/8 tsp
  • Smoked Paprika
  • Jalapeño: 1/4 diced

DIRECTIONS

  1. Heat Olive Oil in skillet over high heat, add corn and cook for 3-5 minutes or until charred
  2. In a bowl, mix together the Mayonnaise, Greek yogurt, Lime juice, Garlic, Chili powder, Corn, Cheese, and Cilantro 
  3. Sprinkle with Paprika on top and enjoy!
